Taco salad, nachos, that kind of thing would be a cinch and awesome for summer.

I can bring some shredded cheese, lettuce and sour cream.

I can bring a #10 can of nacho cheese, tortilla chips & jalapenos. 

 

Salsa and tomatoes would be good.  Taco casseroles are good too!

hey y'all... back from vacation. i can do a couple of mexican casseroles, perhaps serving about 25-30.   maybe if a couple more could be done by someone, and then do a very basic side salad of lettuce tomatoes and shredded cheese is probably enough.

 

my casseroles will consist of flour tortillas cut in strips and then assembled like a lasagna:  with layers of chicken, chiles, cheese,  and this mixture of cream of chicken soup and sour cream, and once assembled baked at 350...

I can bring a casserole as well.  I will plan to serve at least 20.

I will provide the snacks but cannot come this time.  Let the other team bring the desserts and drinks if they can.

I reviewed this before leaving for the store. Does the lettuce, cheese and sour cream make sense still with the casseroles? I was envisioning people putting together their own tacos or nachos when I said that.

I don't see fruit on the list this time. Would that be better?

After nearly two years, last night was the first time I stayed through the entire dinner. The main thing that struck me was the ease of it all. So many people pitched in - our team, the other team, the church, Exit 0 and some of those being served - each person's part was relatively small. Lots of opportunity to chat and have fun. I saw some folks I hadn't in a couple years which was a nice bonus too.

Great way to spend the evening. Heck, I stayed another 30 mins gossiping with a neighbor when it was over.

Love and appreciate you guys so much for taking up this effort.

(It was mild torture though smelling and seeing snowman's chicken enchiladas and watching it all disappear; I'd be in the market for a to-go pan about half that size; name a price!)
