This is what we need:    Taco Meat.; Shells & tortillas; Shredded Lettuce; Chopped Tomatoes; Sour Cream; and Shredded Cheese.  Refried Beans; Chips & salsa.  Am I missing anything?

One Taco Meat - Tina

Taco Meat or Casserole

Poppie, happy to have you join us! We do have use of the stove/oven in the church kitchen. Someone usually arrives at 4 PM, dinner is served at 6 PM. You can get there as early as 4 if you want/need to to reheat your food.

 

Folks, I will not be out of town after all, so will bring  taco shells and tortillas.

Have we thought about how we are going to serve the tacos?  We really do not have the room inside the kitchen to fill the taco shells and then add the lettuce, tomatoes etc. per each person's order?  Are we going to set up an assembly line out on the floor with the lettuce, tomatoe, and cheese?  Just trying to plan ahead.

Taco salad is a regular on our menu. Taco chips, and meat w all the fixins. Way easier and neater then tacos, but pretty much the same thing.

RunnerGirl, your idea of a separate table is a good one. I think there would be room to set one up in front of the kitchen door we don't use for plates and taco/taco salad fixings. Start the line there then the folks can  go on to the serving window for other things. It would give us a U shaped serving area.

Same here.  I think tacos will take FOREVER on a line that we have to fix - salad is much easier!

Filling the shell neatly with each item will take more time than tossing chips and lettuce on a plate and passing it down the line for a spoonful of the rest.

 

JMHO!  I agree with Poppie!

We might want to go with tortilla chips for this one!  What about burritos?  Can we set those up as meat & cheese and add salad fixin's per the individual taste?  Should we do portions?  I'm reluctant on handing over portion control, lest some eyes are bigger than their tummies, and the ones who follow in the food line do not get a fair share of the offerings. 

 

Good call, Poppie.   Hadn't thought that far ahead!

 

Any ideas?

I would go with enchiladas per RunnerGirl's idea.  Those would be easier than burritos because you can just scoop out each one and toss some lettuce and sour cream on top - done.

(doesn't have to be whole wheat tortillas, I used corn tortillas since my husband can't have gluten)

I do think we'll need more than one dish of taco meat.  I'm thinking I'll be cooking about 10 lbs of ground beef.

Sadie -- I bought plates and napkins last time. I am sure there are enough napkins left, but we may need some more sturdy paper plates.

i vote for tacos...  i think we could assemble on the big table and then pass them over to the serving line.

 

i was set to do some casseroles and then it seemed like we switched over to tacos... and i got on board for that.  but it doesn't matter i suppose, tacos or taco salad. either one. and casseroles too, LOL...

 

i'm bringing taco meat and chopped tomatoes.

 

i suppose taco salad would be easier to assemble.

I like th taco salad idea. Everytime I buy hard Taco shells they fall apart :( which in turn, sends me into a childhood Opey Taylor kicking and screaming on the floor fit:) I found a cake recipe for Twinkie Cake.

definitely easier to do.  Tina is doing beef sounds like... i could do chicken if that would give us more of a variety.

i saw twinkies in the grocery yesterday.
